  • 2 packages frozen cauliflower
  • 2 can 15 ounces, each, tomato sauce
  • 1 can Rotel diced tomatoes, undrained
  • 1 red onion, diced
  • 1/4 cup shredded parmesan cheese
  • 1 tsp minced garlic
  • 1 salt and pepper, to taste
  • 2 tbsp melted butter
  • 10 Ritz crackers, crushed

Directions

    Steam cauliflower 10 minutes or until tender.

    Combine melted butter and crushed crackers.

    In large bowl, mix all ingredients.

    Spread into a 9 x 13 pan that has been sprayed with Pam.

    Bake at 350 about 30 minutes, or until bubbly.
