  • 1 head cauliflower, cut into florets
  • 1 cup vidalia onion, chopped (red or yellow if no vidalia)
  • 1 garlic clove, minced
  • 1 cup cilantro, finely chopped
  • 2 tablespoons lemon juice
  • 1 cup cashews (peanuts, almonds, pecans, you choose)
  • 12 teaspoon sea salt
  • 12 teaspoon fresh ground black pepper

Directions

    In a medium pot, steam cauliflower florets with 1 cup of water for 5 minutes or until soft.

    Combine all ingredients in a food processor; pulse until mixture forms a creamy consistency.

    Transfer to a serving bowl.
