Cauliflower Onion Soup

- 1 c. chopped onion
- 2 Tbsp. butter
- 2 Tbsp. flour
- 2 1/2 c. chicken broth
- 2 c. cauliflower
- 3/4 c. milk
- 1/2 c. heavy cream
- white pepper
- cayenne pepper
- salt
- minced parsley
Directions

1In large saucepan, saute onion in butter until soft.

2Stir in flour; cook over low heat, stirring, for 3 minutes.

3Remove pan from heat; add chicken broth, stirring, and add cauliflower and bring to boil.

4Simmer for 30 minutes.

5Puree in blender in 2 batches and return to saucepan.

6Add milk, cream, cayenne pepper, white pepper and salt to taste.

7Cook until hot and serve sprinkled with minced parsley.

8Serves four.
