- 2 lb. cauliflower, broken into flowerets
- 4 cloves garlic, crushed
- 1 c. olive oil
- 3 pt. water
- 1 1/2 Tbsp. salt
- 1 Tbsp. black pepper
- 1 lb. pasta (vermicelli), broken in half
- 2 Tbsp. parsley
- 1 1/2 c. Parmesan cheese
Directions

1In a large pot, saute garlic in oil. Do not let it brown. Pour in water, salt and pepper. Bring to a boil. Toss in cauliflower flowerets and pasta. Cook al dente.

2Add parsley and cheese. Allow to sit 1 minute before serving.

3Stir well to mix melted cheese throughout pasta.
