- 1 (10 oz.) pkg. frozen chopped spinach
- 1 (8 oz.) pkg. cream cheese
- 5 eggs
- 1/2 c. grated parmesan cheese
- 1/2 tsp. salt
- 1/2 tsp. pepper
- pinch of nutmeg
Directions

1Squeeze excess liquid from spinach.

2Place all ingredients in blender-blend till combined.

3Butter a souffle dish or 1 1/2 qt. baking dish.

4Sprinkle with 1 to 2 parmesan cheese - pour mixture in and bake at 375 degrees for 50 minutes or until puffed and golden.
