  • 10 oz. pkg. frozen cauliflower, cooked tender and drained
  • 2 large eggs, separated
  • 2 Tbsp. milk
  • 1/2 tsp. salt
  • pepper to taste
  • 2 Tbsp. finely chopped onion
  • 1/2 c. grated Cheddar cheese
  • 2 Tbsp. melted margarine
  • 2 Tbsp. grated Parmesan cheese

Directions

    In blender, whirl until smooth the cauliflower, egg yolks, milk, salt and pepper.

    In medium bowl, beat egg whites until stiff.

    Gradually fold in the cauliflower mixture, onion and Cheddar cheese.

    Spread over the bottom of a buttered 9-inch pie plate.

    Drizzle with the margarine and sprinkle with the Parmesan. Bake in a preheated 375° oven until golden brown and set, about 20 to 25 minutes.
