- 2 medium heads cauliflower
- 12 tablespoons unsalted butter, or 1 1/2 sticks
- Salt to taste, if desired
- Freshly ground black pepper to taste
- Nutmeg to taste
- Mild Hungarian paprika to taste
Directions

1Break cauliflower into florets and steam or cook in boiling water until barely tender.

2Drain and run under cold water to stop cooking.

3Place in a food processor and, using steel blade, process together with butter to a puree.

4Season with salt, pepper, nutmeg and paprika.

5Refrigerate if desired.

6To serve, heat thoroughly, thinning with milk if necessary.
