- 1 medium head cauliflower
- 2 c. guacamole
- 1/2 c. (2 oz.) shredded Monterey Jack or Cheddar cheese
- radish roses
Directions

1Remove leaves and remove core from cauliflower.

2In covered saucepan, cook whole cauliflower in a small amount of boiling salted water 20 to 25 minutes until just tender when tested with fork.

3Drain well and chill.

4Place chilled cauliflower on platter.

5Garnish platter with radish roses.
