  • 1/2 stick butter
  • 3 green onions, chopped
  • 3 stocks celery, chopped with some leaves
  • 2 carrots, grated
  • 2 cans chicken broth
  • 3 cans cream of potato soup
  • 16 oz. yellow sharp Cheddar cheese, grated
  • chopped parsley
  • 8 oz. sour cream
  • 3 Tbsp. sherry

Directions

    Saute onion, celery and carrots.

    Add the chicken broth. Cover and simmer for 30 minutes.

    Add potato soup, cheese, parsley, sour cream and sherry.

    Simmer for 15 minutes.
