- 3 eggs
- 1 (8 oz.) can cream-style corn
- 1 c. sour cream
- 1 c. shredded Cheddar cheese
- 1 c. yellow cornmeal
- 2 Tbsp. sugar
- 1 tsp. baking soda
- 1/2 tsp. cayenne pepper
- 3 Tbsp. butter
Directions

1Preheat oven to 400°.

2In a bowl beat eggs; add corn, cheese, cornmeal, sugar, soda, cayenne pepper and sour cream.

3Mix well. Melt butter and stir into batter.

4In a 10-inch cast-iron skillet or 9-inch square baking pan, place remaining butter.

5Heat pan in oven until butter melts.

6Immediately pour batter into pan and bake 25 minutes or until firm and golden brown.
