  • 4 large onions, thinly sliced
  • 3 Tbsp. butter (45 ml)
  • 6 c. chicken broth (1 1/2 L)
  • 14 oz. can La Choy chop suey vegetables, rinsed and drained (420-g can)
  • salt and pepper to taste

Directions

    In saucepan, cook onions in butter for 5 minutes.

    Add 3 cups (750 ml) of the broth; simmer, covered, 15 minutes or until onions are tender.

    Stir in remaining broth and vegetables.

    Heat to serving temperature.

    Season with salt and pepper.

    Ladle into soup bowls.
