Celery Casserole

Ingredients

  • 3 c. diced celery
  • 1/2 c. sliced water chestnuts
  • 1 (4 oz.) can sliced, drained mushrooms
  • 3 Tbsp. all-purpose flour
  • 1 c. chicken broth
  • 3/4 c. half and half
  • 1/2 c. Parmesan cheese
  • 1/2 c. soft bread crumbs
  • 1 1/4 c. plus 1 Tbsp. butter

Directions

    Cook celery in small amount of boiling water about 5 minutes. Drain.

    Combine celery, water chestnuts and mushrooms.

    Mix well and pour into greased 13 x 9-inch casserole.

    Melt butter.

    Add flour and cook 1 minute.

    Add chicken stock and half and half. Cook over medium heat, stirring constantly, until thick.

    Pour over celery mixture.

    Mix Parmesan cheese and bread crumbs and sprinkle over top.

    Bake at 350° for 25 minutes.
