  • 3 to 4 lb. pork loin
  • 13 to 14 oz. green chilies
  • 2 cloves garlic, minced
  • 1 lb. pinto beans
  • 2 tsp. salt
  • 2 tsp. chili powder
  • 1 tsp. cumin
  • 1 tsp. oregano
  • water to cover

    Add chilies, garlic, pinto beans and seasonings to pork.

    Add water to cover.

    Cover pan and cook 6 hours.

    Remove pork from bone; shred meat; cook down to desired thickness or add a little water if too dry.

    Serve over chips with cheese, onion, lettuce, tomatoes, guacamole or chopped avocado, sour cream, olives and salsa.
