  • 3 whole chicken breasts, boned, skinned and cut in half
  • 4 Tbsp. butter
  • 1 Tbsp. vegetable oil
  • juice of 1 lemon
  • salt and pepper to taste
  • 1 tsp. thyme
  • 1/2 c. shallots, finely chopped
  • 2 c. fresh mushrooms, thinly sliced
  • 1/2 c. champagne
  • 1/2 c. chicken broth, double strength
  • 2 Tbsp. parsley, finely chopped
  • 1 tsp. flour mixed with 1 tsp. butter
  • 1 c. green grapes, sliced (optional)

Directions
