- 4 Tbsp. butter
- 1 Tbsp. vegetable oil
- juice of 1 lemon
- salt and pepper to taste
- 1 tsp. thyme
- 1/2 c. shallots, finely chopped
- 2 c. fresh mushrooms, thinly sliced
- 1/2 c. champagne
- 1/2 c. chicken broth, double strength
- 2 Tbsp. parsley, finely chopped
- 1 tsp. flour mixed with 1 tsp. butter
- 1 c. green grapes, sliced (optional)
Directions

1Sprinkle chicken with lemon juice and thyme and let marinate for 5 minutes.
