Char Siu Fried Rice

Ingredients
- 1 rice bowl worth Plain cooked rice
- 1 Egg
- 1/3 to 1/4 teaspoon Douchi
- 1 tbsp Shaoxing wine (or cooking sake)
- 50 grams Char siu
- 1 Young green scallions
- 1 Salt, pepper and umami seasonig
- 1 Red pickled ginger
- 1 tbsp Lard
Directions

1Cut the char siu into 1 cm cubes.

2Chop the green onion and red pickled ginger finely.

3Mix the douchi paste and shaoxing wine together.

4Measure 1/4 teaspoon each of salt, pepper and umami seasoning beforehand.

5Add more if necessary during cooking.

6Beat the egg lightly.

7Always leave eggs at room temperature before cooking.

8Put the rice (or freshly cooked rice) on a plate in a doughnut shape.

9Microwave for one minute.

10This evaporates excess moisture and dries out the rice.

11Heat plenty of oil in a wok, swirl it around and pour out.

12Reheat the wok and put oil and lard.

13Keep the heat high!

14Add the beaten egg and rice immediately.

15Loosen the rice by using the ladle with a cutting motion.

16After the rice is loosened, press lightly with the back of the ladle.

17Add the prepared seasonings ( salt, pepper and umami seasoning), red pickled ginger and char siu.

18Stir quickly, check the seasoning and add some more if necessary.

19To finish, drizzle the shaoxing wine and douchi paste mixture along the sides of the wok.

20Add the green onion and stir quickly.

21It's done.

22Transfer to a serving plate.

23Try with home-made char siu!

24Make char siu in a toaster.
