- 1 c. fresh broccoli, diced
- 1/2 c. fresh tomatoes, chopped
- 6 eggs, beaten
- 2 Tbsp. sour cream
- 2 oz. butter
- 1/2 c. grated American cheese
- salt and pepper to taste
Directions

1Combine first three items in a small bowl.

2In an omelette pan, heat butter until foaming.

3Add beaten eggs.

4Cook as for a regular omelette.
