Ingredients

  • 1/3 cup each of 2 or 3 different grains, such as:
  • barley, depuy lentils, wheatberries, kasha or quinoa
  • parsley
  • red onions, chopped
  • 2 sweet potatoes
  • cranberries
  • pomegranate seeds
  • caramelized pumpkin seeds
  • arugula (opt.)
  • Dressing:
  • oil
  • rice vinegar
  • honey
  • mustard
  • s&p

Directions

    Roast diced sweet potatoes and red onion.

    Leave on the sheet to cool.

    Cook grains separately. Do not cook completely as you want some bite to the grains.

    Toss everything together.

    Put on a bed of arugula- opt.
  6. 6
    Dress just before serving.
