- 1/3 cup each of 2 or 3 different grains, such as:
- barley, depuy lentils, wheatberries, kasha or quinoa
- parsley
- red onions, chopped
- 2 sweet potatoes
- cranberries
- pomegranate seeds
- caramelized pumpkin seeds
- arugula (opt.)
- Dressing:
- oil
- rice vinegar
- honey
- mustard
- s&p
Directions

1Roast diced sweet potatoes and red onion.

2Leave on the sheet to cool.

3Cook grains separately. Do not cook completely as you want some bite to the grains.

4Toss everything together.

5Put on a bed of arugula- opt.
