Ingredients
- 3/4 c. flour
- 1 c. packed brown sugar
- 1/2 c. butter or margarine
- 1 c. rolled oats
- 1 tsp. cinnamon
- 6 to 8 medium-sized tart apples, peeled and sliced thin
- 1 c. water
- 1/4 tsp. salt or spike seasoning
- 4 eggs
- 3 Tbsp. finely chopped prosciutto
- pinch of crushed red pepper (optional)
- fresh ground black pepper to taste
- 1/2 c. butter
- 1 c. sifted all-purpose flour
- 3/4 c. finely grated cheese (Asiago, Romano or Gruyere)
- 2 to 3 Tbsp. finely chopped fresh basil
Directions

1Preheat oven to hot (450°).

2Combine water, salt or spike and butter and bring to a boil.

3Remove from heat and add flour all at once.

4Stir vigorously until the mixture leaves the sides of the pan and forms a ball around the spoon.

5Cool slightly.

6Add the eggs, one at a time, and beat until the mixture is smooth and glossy after each addition.

7Add the basil, prosciutto, cheese and pepper with the last egg.

8Drop mixture by rounded teaspoonfuls onto a greased baking sheet.

9Bake for 15 to 20 minutes until puffed and golden.

10Cool on rack.

11Store in airtight container and reheat in oven before serving.

12You may substitute dill and smoked salmon for the basil and prosciutto for a different taste.

13Try splitting the puffs and filling with a mixture of spinach, mushrooms, garlic and shallots sauteed in olive oil until moisture is absorbed.

14Throw in a few toasted pine nuts for texture.
