Ingredients

  • 2 cups almonds or 2 cups slivered almonds
  • 2 cups confectioners' sugar
  • 2 teaspoons almond extract
  • 2 teaspoons corn syrup
  • 1 egg white, lightly beaten

Directions

    If using whole almonds; In a bowl, cover almonds with boiling water, and let them stand for 2 minutes.

    Drain and skin.

    If using slivered almonds, skip this step.

    In a food prcessor, grind the almonds until fine.

    Add sugar, and process until blended.

    Add extract and corn syrup, combine.

    With motor running, add in enough egg white to keep it all together tightly when pressed.

    Wrap in plastic and place in a zipper bag, refrigerate for at least 2 hours.
