Ingredients

  • 1/2 cups Butter, Softened
  • 4 ounces, weight Extra-sharp Cheddar Cheese, Grated
  • 1 cup All-purpose Flour
  • 1 cup Pecans, Finely Chopped
  • 1/2 teaspoons Salt
  • 1/2 teaspoons Cayenne Pepper

Directions

  1. 1
Note: I allow butter and grated cheese to sit out until both come to room temperature.
  2. 2
Cream butter and cheese at medium speed for 3-4 minutes.
  3. 3
Add flour, pecans, salt, and cayenne pepper.
  4. 4
    Mix until well blended.
  5. 5
Divide and shape dough into 2 rolls about 1 1/2 inches in diameter by 6 inches in length.
  6. 6
Wrap dough in waxed paper or parchment paper, and place rolls in a resealable plastic bag in the freezer until firm, about 1 hour.
  7. 7
    Preheat oven to 375 degrees.
  8. 8
Using a serrated knife, cut rolls into 1/4 inch thick slices and lay on an ungreased cookie sheet, leaving space so they do not touch.
  9. 9
Bake 8-10 minutes, just until edges are golden brown.
  10. 10
    Makes about 36 crackers.
  11. 11
If you freeze the dough for future use, allow the rolls to sit at room temperature for about 10 minutes before slicing.
