  • 2 cups Water
  • 2 cups Potatoes, Peeled And Cubed
  • 1/2 cups Carrots, Sliced
  • 1/2 cups Celery, Sliced
  • 1/4 cups Onion, Chopped
  • 1 teaspoon Salt
  • 1/4 teaspoons Pepper
  • 1/4 cups Butter
  • 1/4 cups All-purpose Flour
  • 2 cups Milk
  • 2 cups Shredded Sharp Cheddar Cheese (or Any Combination Of Cheeses You Prefer)
  • 1-1/2 cup Fully Cooked Ham, Cubed

    In a large saucepan, bring water, potatoes, carrots, celery, onion, salt, and pepper to a boil. Reduce heat; cover and simmer for 8-10 minutes or until vegetables are just tender. Remove from heat and do not drain.

    Meanwhile, in a large skillet, melt the butter. Stir in the flour until smooth; gradually add the milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Add cheese and stir until melted. Stir into the undrained vegetables and return to heat. Add ham and heat through, stirring occasionally.
