  • 2 c. cooked rice
  • 1 c. (4 oz.) shredded low-fat Cheddar cheese
  • 1/2 c. minced onion
  • 3 Tbsp. all-purpose flour
  • 1/2 tsp. salt
  • 1/4 tsp. ground black pepper
  • 3 egg whites
  • 1/8 tsp. cream of tartar
  • vegetable cooking spray
  • applesauce (optional)
  • low-fat sour cream (optional)

Directions

    Slice center cuts of eggplant into 1-inch thick slices.

    Fry in oil until partially clear. Drain on paper towels.

    Place cuts into a 9 x 13-inch buttered casserole dish. Top each slice with Mozzarella cheese and 1/4 cup highly seasoned spaghetti sauce. Bake at 350° for 20 to 25 minutes on lower rack.
