- 2 c. cooked rice
- 1 c. (4 oz.) shredded low-fat Cheddar cheese
- 1/2 c. minced onion
- 3 Tbsp. all-purpose flour
- 1/2 tsp. salt
- 1/4 tsp. ground black pepper
- 3 egg whites
- 1/8 tsp. cream of tartar
- vegetable cooking spray
- applesauce (optional)
- low-fat sour cream (optional)
Directions

1Slice center cuts of eggplant into 1-inch thick slices.

2Fry in oil until partially clear. Drain on paper towels.

3Place cuts into a 9 x 13-inch buttered casserole dish. Top each slice with Mozzarella cheese and 1/4 cup highly seasoned spaghetti sauce. Bake at 350° for 20 to 25 minutes on lower rack.
