  • 3 c. packed, shredded carrots
  • 1 Tbsp. lemon juice
  • 1 (20 oz.) can crushed pineapple, well drained
  • 1 tsp. salt
  • 2 tsp. cinnamon
  • 1/2 tsp. crushed cloves
  • 1/2 tsp. nutmeg
  • 1/2 tsp. allspice
  • 1 c. chopped nuts (walnuts)
  • 1 c. chopped dates
  • 3 c. flour
  • 2 c. sugar
  • 2 tsp. baking powder
  • 2 tsp. baking soda
  • 1 1/2 c. oil
  • 5 eggs
  • 2 tsp. vanilla
  • 1 c. flaked coconut

Directions

    Combine carrots and lemon juice.

    Combine flour, sugar, baking powder, baking soda, spices and salt in a bowl.

    Beat in eggs, one at a time and stir in vanilla, coconut, walnuts, dates and pineapple until well blended.

    Pour into greased pans (2 loaf pans).

    Bake at 350° until toothpick comes out clean and cakes shrink away from sides of pan (approximately 60 minutes).
