Cheddar Squash Casserole

Ingredients

  • 2 lb. yellow squash, cut in 1/4-inch slices
  • 1 medium onion, sliced
  • 1 c. sour cream
  • 2 beaten egg yolks
  • 2 Tbsp. all-purpose flour
  • 2 stiffly beaten egg whites
  • 2 c. shredded Cheddar cheese
  • 8 slices cooked bacon, crumbled

Directions

    Cook squash slices and onion in boiling water until tender. Drain.

    Mix sour cream, egg yolks and flour; fold in egg whites. In a 9 x 9-inch casserole dish, layer 1/2 squash, 1/2 sour cream mix and 1/2 cheese.

    Crumble bacon over cheese.

    Layer remaining squash, sour cream mix and cheese.

    Bake at 350° for 45 minutes.
