  • 2 Tbsp. butter
  • 1 1/2 lb. ground beef
  • 1 c. chopped onion
  • 1 Tbsp. flour
  • 1 (6 oz.) can tomato paste
  • 1 tsp. salt
  • 1 tsp. chili powder
  • 1/8 tsp. pepper
  • 1 c. (4 oz.) cubed Cheddar cheese
  • 1/2 c. sliced pitted ripe olives
  • 1 (18 oz.) pkg. corn muffin mix

    In a large skillet, melt butter.

    Add beef and onion; cook until beef is lightly browned.

    Stir in flour.

    Add tomato paste, salt, chili powder and pepper.

    Remove from heat.

    Add cheese and olives.

    Spread evenly over bottom of a 9 x 12-inch baking pan. Prepare muffin mix according to package directions.

    Bake in a preheated 400° oven for 30 to 40 minutes. Let stand 5 minutes.
