  • 1 lb. margarine
  • 1 lb. mild Cheddar cheese
  • 1 tsp. salt
  • enough plain flour to make stiff dough (4 to 6 c.)
  • 1 tsp. red pepper (heaping or to taste)

    Preheat oven to 300°.

    Grate cheese.

    Let cheese and butter stand at room temperature until soft, then beat with electric mixer. Add salt and red pepper.

    Add flour, one cup at a time, until mixture is stiff.

    Roll out on wax paper. Cut with small cutter and place a pecan on top of each. Bake for 15 to 20 minutes. Biscuits will be yellow instead of brown.
