  • 1 pkg. lemon Jell-O
  • 1 c. boiling water
  • 1 (8 oz.) can crushed pineapple
  • 1 (8 oz.) pkg. cream cheese
  • 1 c. sugar
  • 1 tsp. vanilla
  • 3 Tbsp. lemon juice
  • 1 can evaporated milk, whipped
  • graham cracker crumbs

Directions

    Dissolve lemon Jell-O into 1 cup boiling water; let set overnight.

    Fold pineapple (drained), cream cheese, sugar, vanilla, lemon juice and milk into whipped cream, then pour into baking dish that has been lined with graham cracker crumbs.

    (To get graham cracker crumbs to stick to pan, butter.)

    Also sprinkle crumbs on top.

    Make sure all of the cream cheese is not lumpy.
