Pumpkin Oatmeal

Ingredients

  • 1 cup regular oatmeal or rolled mixed grains
  • 1/2 tsp pumpkin pie spice
  • 2 tbsp brown sugar
  • 1/2 tsp pure vanilla extract (I add extra)
  • 1/2 cup pumpkin puree (canned pure pumpkin)
  • 1/2 cup vanilla soy milk (or regular soy or rice milk)
  • 1 cup water
  • 2 tbsp flaxseed meal (you can make it without this but it's a very healthy addition)

Directions

    Combine the oatmeal, water, milk and vanilla.

    Microwave until thick and hot.

    This may take 5 to 6 minutes more or less depending on your microwave.

    You can also simmer this on your stove top.

    Stir in the pumpkin, brown sugar, flaxseed and pumpkin pie spice.

    Mix well and enjoy.
