Ingredients

  • 1/4 c. green onions
  • 2 Tbsp. pitted green olives
  • 1 Tbsp. pimento, chopped
  • 1 tsp. capers
  • 2 c. (8 oz.) sharp Cheddar cheese, grated
  • 1/2 c. mayonnaise
  • 6 English muffins
  • 1 Tbsp. Parmesan cheese

Directions

    Thinly slice onions, including green part. Drain the olives, pimento and capers well, then chop.

    Combine ingredients and spread on English muffins. Cut into quarters. Sprinkle with Parmesan cheese.

    Bake at 350° for 20 minutes or until cheese is bubbling.

    Makes 48 appetizers.

    May be refrigerated for 24 hours or frozen.

    Bring to room temperature before baking.
