Cheese Chicken Rolls

  • 4 chicken breasts, skinned and boned
  • salt
  • 2 oz. Swiss cheese, cut into 2 1/2 x 1/2-inch strips
  • 4 Tbsp. crumbled Blue cheese
  • 1 c. fine dry bread crumbs
  • 1 Tbsp. butter, melted
  • 1/2 c. flour
  • 2 eggs, beaten

Directions

    Pound chicken to 1/4-inch thickness and lay flat on waxed paper.

    Salt lightly.

    Place a strip of Swiss across small end of chicken breast and sprinkle with Blue cheese.

    Roll up and fasten with toothpick.

    Toss bread crumbs with melted butter.

    Coat each roll with flour.

    Dip in eggs, then roll in bread crumbs.

    Place on oiled, shallow baking pan and bake, uncovered, at 325° for 40 to 45 minutes.
