  • 2 eggs, lightly beaten
  • 1 c. plain yogurt
  • 1/4 c. melted butter, cooled
  • 1 c. corn meal
  • 1 tsp. each: salt and baking powder
  • 1/2 tsp. baking soda
  • 1 c. grated Monterey Jack cheese
  • 1 c. canned creamed corn
  • 1/2 c. minced scallions
  • 1 (4 oz.) can green chilies

Directions

    Heat oven to 400°.

    Whisk together eggs, yogurt and butter in medium bowl.

    Add dry ingredients and mix until well blended. Add remaining ingredients.
