- 2 eggs, lightly beaten
- 1 c. plain yogurt
- 1/4 c. melted butter, cooled
- 1 c. corn meal
- 1 tsp. each: salt and baking powder
- 1/2 tsp. baking soda
- 1 c. grated Monterey Jack cheese
- 1 c. canned creamed corn
- 1/2 c. minced scallions
- 1 (4 oz.) can green chilies
Directions

1Heat oven to 400°.

2Whisk together eggs, yogurt and butter in medium bowl.

3Add dry ingredients and mix until well blended. Add remaining ingredients.

4Mix well.

5Pour into greased 10-inch heavy skillet and bake 40 minutes.
