Ingredients

  • 1 (10 oz.) pkg. Monterey Jack cheese, grated
  • 1 (10 oz.) pkg. sharp Cheddar cheese, grated
  • 1 medium Spanish onion, chopped
  • 3/4 c. green pepper, chopped
  • 1/2 c. red sweet pepper, chopped (optional)
  • salt and pepper to taste
  • ground dill weed (several dashes)

Directions

    Mix all ingredients together.

    Add enough mayonnaise to bind mixture (approximately 3 to 4 tablespoons).

    Let chill at least 4 to 5 hours.

    Use in thinly sliced spiced meat sausage or peppered beef, celery, tomato, etc.
