- 2 Tbsp. oil
- 1 Tbsp. flour
- 4 Tbsp. chili powder
- 1 qt. tomato juice
- 1 lb. Colby cheese
- 1/2 chopped onion
- corn tortillas
Directions

1Saute onion in oil.

2Add flour and chili powder.

3Make a paste. Add tomato juice.

4Simmer 30 minutes.

5Grate cheese; add onion. Soften corn tortillas in sauce.

6Fill with cheese and fold in half. Arrange in 9 x 13-inch pan.

7Pour remaining sauce on top.

8Sprinkle with shredded cheese.

9Bake at 350° for 30 minutes.
