Ingredients

  • 3 eggs, well beaten
  • 2 tsp. salt
  • 1 or 2 drops bottled liquid red pepper seasoning
  • 1 tsp. paprika
  • 1 1/2 c. quick cooking grits
  • 6 c. water
  • 1/2 c. butter or margarine
  • 3 c. grated Cheddar cheese

Directions

    Beat and set aside the first 4 ingredients.

    Combine in a saucepan the grits, water and butter/margarine.

    Cook over medium heat for 3 minutes.

    Mix the hot gris with the Cheddar cheese. Stir in egg mixture, mixing well.

    Turn into greased 3-quart baking dish.

    Bake in low oven at 330° for 45 minutes or until lightly browned.

    Makes 8 servings.
