Ingredients
- 2 c. coarsely chopped onion
- 1 1/2 c. sliced celery
- 1 c. uncooked rice
- 1/4 c. margarine
- 1 (1 lb.) can tomatoes
- 2 c. water
- 2 bouillon cubes (chicken or vegetable flavor)
- 2 c. shredded cheese (1/2 lb.)
- salt and pepper to taste
Directions

1Saute onion, celery and rice in margarine until rice is slightly brown, stirring occasionally.

2Add remaining ingredients, except cheese.

3Bring to a boil.

4Arrange layers of the rice mixture with the shredded cheese in a 2-quart casserole.

5Bake in oven at 350° for about 30 minutes or until rice is tender.
