Cheese Rice Casserole

Ingredients

  • 2 c. coarsely chopped onion
  • 1 1/2 c. sliced celery
  • 1 c. uncooked rice
  • 1/4 c. margarine
  • 1 (1 lb.) can tomatoes
  • 2 c. water
  • 2 bouillon cubes (chicken or vegetable flavor)
  • 2 c. shredded cheese (1/2 lb.)
  • salt and pepper to taste

Directions

    Saute onion, celery and rice in margarine until rice is slightly brown, stirring occasionally.

    Add remaining ingredients, except cheese.

    Bring to a boil.

    Arrange layers of the rice mixture with the shredded cheese in a 2-quart casserole.

    Bake in oven at 350° for about 30 minutes or until rice is tender.
