Cheese Rice Spinach Casserole

  • 2 c. cooked rice
  • 3 Tbsp. melted butter
  • 4 beaten eggs
  • 1 pkg. frozen spinach, drained
  • 1 c. milk
  • 1/2 lb. grated sharp Cheddar cheese
  • 1 tsp. salt
  • 1/2 tsp. each: thyme, rosemary and marjoram

Directions

    Mix all ingredients and bake at 350° in a greased, uncovered, casserole dish for 1 1/4 to 1 1/2 hours, until custard is set and not runny.

    Good served with meat loaf or as an appetizer.
