- 2 cups drained bottled green olives
- 1/2 teaspoon dried thyme
- 1 bay leaf
- 2 teaspoons wine vinegar
- 1 tablespoon salt
- 2 garlic cloves, slivered
- 1/2 lemon, sliced
- 1 fresh thyme sprig
Directions

1Rinse the olives and soak in water for one hour. Drain. (Removes excess salt.)

2Combine 3 cups water in a saucepan with dried thyme, bay leave, vinegar and salt. Bring to boil. Remove from heat and let cool. Pack olives, garlic, lemon and sprig into jar(s). Pour liquid over and marinate in refrigerator for seven days. Keeps for up to two months.
