- 1 c. milk
- 1/2 c. butter
- 1 c. all-purpose flour
- 1/8 tsp. each: nutmeg and red pepper
- 4 eggs, slightly beaten
- 3/4 c. shredded Gruyere cheese
- 1/4 c. Parmesan cheese
Directions

1Heat oven to 400°.

2Heat milk and butter to rolling boil in 2-quart saucepan.

3To flour, mix nutmeg and pepper.

4Combine cheeses.

5Stir in flour.

6Stir vigorously over low heat until mixture forms a ball, about 1 minute.

7Remove from heat.

8Beat in 4 eggs all at once; continue beating until smooth.

9Fold in 2/3 cup of cheese.

10Drop dough by tablespoons onto greased cookie sheet to form 8-inch ring.

11Smooth with spatula.

12Sprinkle with remaining cheese.

13Bake until puffed and golden, 50 to 60 minutes.
