Ingredients

  • 1/2 c. chopped onion
  • 1/2 c. chopped celery
  • 1/2 c. chopped carrots
  • 1/4 c. margarine
  • 3 Tbsp. flour
  • 3 Tbsp. cornstarch
  • 4 c. milk
  • 4 c. chicken stock
  • pinch of soda
  • 1 medium potato, chopped into small cubes
  • 1 lb. Kraft Velveeta
  • salt
  • white pepper

Directions

    Saute onion, celery and carrots in margarine in heavy pan. Cook until tender.

    Add flour and cornstarch.

    Cook until bubbly and add milk and chicken stock.

    Add soda and stir until smooth. Add potato cubes.

    Cook for 20 minutes.

    Then add cheese; continue cooking over low heat until potatoes are done.

    Season with salt and pepper.
