  • 4 chicken bouillon cubes
  • 1 qt. water
  • 1 c. celery, diced
  • 1 c. onion, diced
  • 2 1/2 c. potatoes, cubed
  • 1 c. carrots, diced
  • 1 (20 oz.) pkg. frozen mixed vegetables
  • 2 cans cream of chicken soup
  • 1 lb. Velveeta cheese

Directions

    Cook bouillon cubes, water, celery and onions for 20 minutes, covered.

    Add potatoes, carrots and frozen mixed vegetables. Cook 30 minutes, covered.

    Add soup and cheese.

    Heat until cheese melts.

    Stir.
