- 1/2 lb. sharp Cheddar cheese
- 1/4 lb. (1 stick) butter or margarine
- 1/2 tsp. salt
- 2 c. plain flour
- dash of cayenne pepper (if desired)
Directions

1Grate cheese into large bowl and let stand at room temperature until softened.

2Add softened margarine.

3Heat oven to 350°.

4Mix salt, pepper and flour.

5Gradually work into cheese/butter mixture. Blend until smooth.

6Using a cookie press, squeeze out cheese straws onto ungreased baking sheets.

7Cut into 2 to 3-inch lengths. Bake for about 15 to 20 minutes until crisp and golden.

8Do not allow to brown.
