Cheese Stuffed Potatoes

  • 4 medium baking potatoes, baked
  • 1/4 c. butter or margarine
  • 1/2 c. milk
  • salt and pepper to taste
  • 1 c. grated Cheddar cheese or finely diced American processed cheese (1/4 c. reserved)
  • 1 Tbsp. finely chopped onion

Directions

    Bake potatoes.

    After standing time, halve potatoes lengthwise and carefully scoop out inside.

    Set shells aside.

    Combine potatoes, butter, milk, salt and pepper in medium mixing bowl. Mash until fluffy.
