- 1 c. finely grated Colby cheese
- 4 large tomatoes
- 4 Tbsp. heavy cream
- 1 whole egg
- 1 tsp. chopped parsley
- 1/2 tsp. salt
- 1/4 c. crumbled bread crumbs
- dash of black pepper
Directions

1Wash and scoop out centers of the tomatoes.

2Retain the cap. Season.

3Combine the cheese, cream, eggs and parsley in a bowl and mix.

4Fill the tomatoes and sprinkle bread crumbs.

5Replace the caps and place in a buttered baking pan.

6Bake at 325° for 17 minutes.

7Serve.
