Cheese Stuffed Tomatoes

  • 1 c. finely grated Colby cheese
  • 4 large tomatoes
  • 4 Tbsp. heavy cream
  • 1 whole egg
  • 1 tsp. chopped parsley
  • 1/2 tsp. salt
  • 1/4 c. crumbled bread crumbs
  • dash of black pepper

Directions

    Wash and scoop out centers of the tomatoes.

    Retain the cap. Season.

    Combine the cheese, cream, eggs and parsley in a bowl and mix.

    Fill the tomatoes and sprinkle bread crumbs.

    Replace the caps and place in a buttered baking pan.

    Bake at 325° for 17 minutes.

    Serve.
