Cheese Wild Rice Spinach

Ingredients

  • 1 (6 oz.) pkg. long grain wild rice
  • 4 oz. can sliced mushrooms, drained
  • 2 tsp. prepared mustard
  • 1/2 tsp. salt
  • 2 1/2 c. water
  • 10 oz. pkg. chopped spinach
  • 1/4 c. chopped onions
  • 1 Tbsp. margarine
  • 8 oz. cream cheese, cubed

Directions

    In a large bowl, mix first 4 ingredients.

    Bring water to a boil.

    Add spinach, onion and margarine.

    Continue boiling about 5 minutes.

    Pour this over rice mixture.

    Stir and cover tightly. Bake 30 minutes at 375°, then remove from oven and stir in cubed cheese.

    Bake, uncovered, for 10 to 15 minutes.
