- 1 lb. Ricotta cheese
- 1 lb. sour cream
- 1 lb. cream cheese
- 1 c. sugar
- 1 stick butter, melted
- 3 jumbo or 4 medium eggs
- 3 Tbsp. flour
- 3 Tbsp. cornstarch
- 4 1/2 tsp. vanilla extract
- 4 1/2 tsp. fresh squeezed lemon juice
Directions

1Place ingredients in order in a large mixing bowl.

2Beat with electric mixer. Start on low, move to medium and finish for 10 minutes on high.

3Batter should be a smooth liquid.

4Grease and lightly flour a 10-inch spring-form pan (3-inches high).

5Bake for 1 hour in preheated 350° oven.

6Leave cake in oven with door closed for an additional hour after heat is turned off.

7Cool on rack and refrigerate.

8Serves 16 to 20.
