Cheesy Carrot Crackers

  • 1 1/4 cups all purpose flour
  • 1 tsp mustard powder
  • 9 tbsp butter
  • 1 tbsp cumin seeds
  • 1 cup finely grated carrot
  • 1 cup grated cheddar cheese
  • 1 None large egg yolk

Directions

    Preheat the oven to 400°F. Lightly oil 2 baking trays and line with baking paper.

    Sift the flour and mustard into a medium bowl, then rub in the butter. Stir in the seeds, carrot, cheese and egg yolk and mix to a firm dough. Knead on a floured work surface until smooth. Cover and refrigerate for 30 mins.

    Roll the dough onto a floured work surface until 4mm thick. Using a floured pastry cutter, cut 70 x 2 inch rounds from the dough, then place about 1/2 inch apart on the baking trays.

    Bake the crackers for about 12 mins or until browned lightly. Allow to cool on the trays, then serve.
