  • 6 pan dressed catfish or 2 lb. small fillets
  • 3/4 c. Parmesan cheese
  • 1/4 c. flour
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 1 tsp. paprika
  • 1 egg, beaten
  • 1 Tbsp. milk
  • 1/4 c. margarine, melted

Directions

    Combine cheese, flour, salt, pepper and paprika in a bowl. Mix egg and milk.

    Dip fish in egg mixture and then in cheese mixture to coat well.

    Place aluminum foil in 13 x 9 x 2-inch baking dish and place fish on foil.

    Pour margarine over fish and bake at 350° until golden brown.
