  • 2 Tablespoons Oil For Pan
  • 1-1/2 cup White Cornmeal (fine Ground)
  • 3 Tablespoons Butter, Melted
  • 1 whole Egg
  • 1/2 cups Sour Cream
  • 1-1/2 teaspoon Baking Powder
  • 1/2 cups Milk
  • 1 cup Whole Kernel Corn (fresh, Frozen Or Canned)
  • 1 cup Extra-sharp Cheddar Cheese, Grated
  • 4 ounces, fluid Chopped Green Chilies

Directions

    Put the cooking oil in a cast iron skillet. Put the skillet in the oven and turn the oven on to preheat to 400F.

    Mix all ingredients together in a large bowl. When oven has reached 400 degrees, quickly pour the cornbread mixture into the hot oil and return the pan immediately to the oven.

    Bake for 30 minutes or until the top is golden brown.
