  • 1 1/4 c. stoneground corn meal
  • 1 c. cream-style corn (best if fresh creamed corn, but canned is okay)
  • 1 c. sour cream
  • 1/3 c. vegetable oil
  • 2 eggs
  • 1/4 tsp. salt
  • 2 tsp. baking powder
  • 1 c. shredded Cheddar cheese

Directions

    Combine all ingredients, stirring by hand.

    Pour into well-greased 8-inch square pan or round cake pan.

    Bake at 400° for 40 minutes until well browned.

    Allow to stand 10 minutes before cutting into squares or slices.
