- 1 eggplant, peeled and cubed
- 4 tomatoes, chopped
- 1 c. shredded Cheddar cheese
Directions

1Melt butter in skillet.

2Add eggplant cubes and toss to coat. Saute until tender.

3Place in a 9 x 9-inch baking dish.

4Arrange tomatoes on top and sprinkle with cheese.
